- 9 eggs, separated
- 1 tsp. cream of tartar
- 1/2 tsp. salt
- 1 1/4 c. sugar
- 1/2 tsp. vanilla
- 1 1/4 c. sifted flour
- 1/2 tsp. lemon extract
- 1/2 tsp. almond extract
Directions

1Beat egg whites until frothy.

2Add cream of tartar and salt. Beat until stiff.

3Fold in sugar.

4Pour half of egg white mixture into another bowl.

5Into one half, fold in vanilla and 1/2 cup flour.

6Pour into a 10-inch tube pan.

7Beat egg yolks until thick and lemon colored.

8Add extracts; fold into remaining egg whites. Fold in remaining flour.

9Pour over mixture in tube pan.

10Cut through batter several times with knife.

11Bake at 350° for about 50 minutes.

12Invert pan and cool.

13Remove and frost as desired.
