  • 1 cup All-purpose Flour
  • 3/4 cups Cornmeal
  • 3 Tablespoons Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoons Salt
  • 3/4 cups Rice Milk
  • 2 teaspoons Lemon Juice
  • 2 whole Eggs, Beaten
  • 1/4 cups Oil Or Melted Coconut Butter

    Preheat oven to 375°F.

    Sift together dry ingredients.

    In a medium bowl, whisk together the rice milk and the lemon juice and let stand for a minute or two. Whisk in the eggs and oil or melted coconut butter.

    Make a well in the dry ingredients and pour wet mixture into the well. Stir to combine, until major lumps are gone.

    Pour into a well-oiled 8x8 pan (helps make a good crust) and bake for about 30 minutes, until golden brown on top and tester comes out clean.
