- 1 cup All-purpose Flour
- 3/4 cups Cornmeal
- 3 Tablespoons Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 3/4 cups Rice Milk
- 2 teaspoons Lemon Juice
- 2 whole Eggs, Beaten
- 1/4 cups Oil Or Melted Coconut Butter
Directions

1Preheat oven to 375°F.

2Sift together dry ingredients.

3In a medium bowl, whisk together the rice milk and the lemon juice and let stand for a minute or two. Whisk in the eggs and oil or melted coconut butter.

4Make a well in the dry ingredients and pour wet mixture into the well. Stir to combine, until major lumps are gone.

5Pour into a well-oiled 8x8 pan (helps make a good crust) and bake for about 30 minutes, until golden brown on top and tester comes out clean.
