Ingredients

  • 20 ounces, weight Frozen Corn
  • 2 cans (15 Oz. Can) Black Beans
  • 1 whole Red Onion, Chopped
  • 1 cup Green Pepper, Chopped
  • 1 Tablespoon Parsley
  • 1/4 cups Sour Cream
  • 2 Tablespoons Vinegar
  • 1/2 cups Mayonnaise
  • 1 teaspoon Cumin
  • 1 dash Chili Powder
  • 1 dash Salt And Pepper
  • 2 cans (10 Oz. Can) Rotel

Directions

    In a large bowl, combine corn, beans, onion, green pepper and parsley.

    In a small bowl, combine sour cream, vinegar, mayonnaise, cumin, chili powder, salt and pepper.

    Mix well.

    Add sour cream mixture to corn/bean mixture.

    Stir to coat.

    Add Rotel and stir to combine.

    Refrigerate for several hours for flavors to mix.
