- 1-1/4 cup all-purpose flour, sifted
- 3/4 cup cornmeal
- 3 tsp. baking powder
- 1 tsp. salt
- 1/4 cup sugar
- 1 lg. egg, well-beaten
- 3/4 cup milk
- buttermilk
- 4 tbsp. margarine, melted
Directions

1Sift together the flour, cornmeal, baking powder and salt.

2Set aside.

3Combine the sugar, egg, milk, and margarine.

4Add to the dry ingredients, stirring just enough to moisten the dry ingredients.

5Place in a greased 8x8-inch pan and bake in a 400F oven about 20 minutes or until golden.

6Serve hot with butter and apple butter.

7You can also make a dozen muffins or corn sticks.

8Test after 15 minutes.
