Dandelion Salad

  • 2 eggs
  • 5 slices bacon
  • 1/2 c. cream
  • 4 Tbsp. vinegar
  • 1 lb. young dandelions (non-flowering stage)
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 2 Tbsp. butter
  • 1/2 tsp. paprika
  • 1/2 tsp. pepper

Directions

    Wash and dry dandelions.

    Place in bowl and let stand in a warm place.

    Fry and dice bacon.

    Drop the bacon with drippings on top of the dandelions.

    Mix butter and cream and melt slowly. Beat the eggs; add salt, pepper, vinegar and sugar.

    Pour into the frying pan and cook until it thickens like a custard.

    Pour this smoking hot over dandelions and stir well.
