- 2 eggs
- 5 slices bacon
- 1/2 c. cream
- 4 Tbsp. vinegar
- 1 lb. young dandelions (non-flowering stage)
- 1 Tbsp. sugar
- 1 tsp. salt
- 2 Tbsp. butter
- 1/2 tsp. paprika
- 1/2 tsp. pepper
Directions

1Wash and dry dandelions.

2Place in bowl and let stand in a warm place.

3Fry and dice bacon.

4Drop the bacon with drippings on top of the dandelions.

5Mix butter and cream and melt slowly. Beat the eggs; add salt, pepper, vinegar and sugar.

6Pour into the frying pan and cook until it thickens like a custard.

7Pour this smoking hot over dandelions and stir well.
