- 1 qt. blossoms (no stems)
- 9 lb. sugar
- 1/2 c. lemon juice
- 3 gal. water
- 3 lb. raisins
- 1 dry yeast
Directions

1Bring water to a boil, add sugar and bring to a boil.

2Remove from heat.

3Put in blossoms, let stand until lukewarm.

4Add yeast, dissolved in 1/2 cup lukewarm water.

5Let stand 7 days, stirring in the morning and night.

6After 7 days, strain through cheesecloth. Add raisins and lemon juice, let stand 2 weeks.

7Do not stir! Strain after 2 weeks and put in bottles.

8Do not cap too tightly. Let stand for 3 weeks before drinking.
