Danish Christmas Rice Pudding

  • 6 c. milk
  • 1 c. rice
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 whole almond, blanched
  • 3/4 c. almonds, blanched and chopped
  • 1 tsp. vanilla
  • 1 qt. whipping cream
  • 1 can cherry pie filling

Directions

    Put milk, rice, sugar and salt into the top of a double boiler.

    Cover and cook until rice is soft and thick (about 1 1/2 hours), stirring occasionally.

    Cool completely then add vanilla, chopped almonds and whole almond.

    Whip whipping cream until stiff.

    Carefully stir into rice mixture.
  6. 6
    Heat cherry pie filling and serve on top.
