Danish Christmas Rice Pudding

- 6 c. milk
- 1 c. rice
- 3 Tbsp. sugar
- 1/2 tsp. salt
- 1 whole almond, blanched
- 3/4 c. almonds, blanched and chopped
- 1 tsp. vanilla
- 1 qt. whipping cream
- 1 can cherry pie filling
Directions

1Put milk, rice, sugar and salt into the top of a double boiler.

2Cover and cook until rice is soft and thick (about 1 1/2 hours), stirring occasionally.

3Cool completely then add vanilla, chopped almonds and whole almond.

4Whip whipping cream until stiff.

5Carefully stir into rice mixture.

6Heat cherry pie filling and serve on top.
