Danish Orange Cake

Ingredients

  • 1 c. brown sugar
  • juice of 1 orange
  • 1 c. white sugar
  • 2 c. plain or self-rising flour (if plain flour add 1/2 tsp. salt, 1 tsp. soda and 1/2 tsp. baking powder)
  • 1/2 c. shortening
  • 2 eggs
  • 1 c. buttermilk
  • 1 c. ground raisins
  • 1 small orange peel
  • ground nuts (optional)

Directions

    Set aside first 2 ingredients for topping.

    Sift dry ingredients and mix well.

    Add shortening and milk.

    Beat 2 minutes.

    Add egg.

    Beat 2 more minutes.

    Fold in ground raisins, ground orange peel and nuts.

    Bake in tube pan at 350° for 35 to 45 minutes or until tests done.

    Pour brown sugar and orange juice (heated) over cake while still in pan.
