Ingredients

  • 1/2 c. butter
  • 3/4 c. sugar
  • 2 eggs
  • grated rind of 1 lemon
  • 4 tsp. lemon juice
  • 1 c. sifted all-purpose flour
  • 1/2 tsp. salt
  • 5 tart cooking apples, peeled and sliced in 1/8-inch lengthwise pieces
  • 2 Tbsp. melted butter
  • 1 c. whipped cream

    In bowl, mix butter and sugar until thoroughly creamed.

    Add 1 egg at a time; beat thoroughly.

    Beat in lemon rind and 1 teaspoon juice.

    Sift flour and salt; gradually add to batter and beat thoroughly.

    Put into 9-inch spring-form pan.

    Toss apple slices onto batter.

    Add remaining lemon juice; drizzle melted butter over apples.

    Sprinkle 1/4 cup sugar.

    Bake at 350° for 1 hour and 5 minutes, until apples are browned and cake pulls away from the sides of the pan.
