- 1 large head red cabbage
- 1/2 c. bacon drippings
- 1 large onion, chopped
- 1 c. dry white wine
- 1/4 c. sugar
- 1/4 c. cider vinegar
- 1 tsp. minced garlic
- 1 apple, peeled
- salt to taste
- Louisiana hot sauce or cayenne pepper to taste
Directions

1Over medium heat in heavy saucepan, saute onion in bacon drippings until clear.

2Add wine, sugar, vinegar and garlic. Simmer 5 minutes.

3Add cabbage; cover and simmer another 20 minutes.

4Add apples and simmer, stirring often, until cabbage and apples are tender.

5Season with salt and hot sauce.
