Ingredients

  • 1 apple
  • lemon juice
  • 4 eggs, hard-cooked
  • 2/3 c. whipping cream
  • 2 tsp. dry mustard
  • 3 Tbsp. mayonnaise
  • 5 Tbsp. chopped fresh dill (optional)
  • 4 slices toast
  • 4 oz. smoked salmon (if smoked salmon is not available, canned salmon mixed with black pepper and lemon juice may be substituted)

Directions

    Peel, core and slice the apple; dip in lemon juice.

    Shell and slice the hard-cooked eggs.

    Lightly whip the cream and mix with mustard, mayonnaise and dill.

    Remove the crusts from the slices of toast and arrange the smoked salmon slices on each piece.

    Top with an apple slice and slices of hard-cooked egg.

    Finally spoon on the mayonnaise mixture.
