Dark Chocolate Mousse

  • 5 whole Egg Whites
  • 4 whole Egg Yolks
  • 8 ounces, fluid Good Quality, Dark Chocolate
  • 1 Tablespoon Butter
  • 1 pinch Salt

Directions

    Break the chocolate into small pieces. Add the butter and put into a heatproof bowl over a simmering pot of water. Allow to gently melt, stirring occasionally. Remove from heat and allow to cool.

    Add a pinch of salt to the egg whites and whisk into soft peaks.

    Gently break up the yolks in a separate bowl with a fork and stir into the cooled chocolate mixture. It should become very thick.

    In three separate batches, fold in the egg whites gently until completely combined. Spoon into small ramekins and refrigerate for at least an hour to set.

    TO SERVE: Take mousse out of the fridge a few minutes before serving, so they are not so cold. Serve with vanilla ice cream and strawberries and sauce for a fancy and easy treat!
