- 4 c. dates
- 2 c. nuts, chopped
- 2 c. boiling water
- 2 3/4 c. flour
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1/2 c. diet margarine
- 1 1/4 c. brown sugar
- 2 eggs
- 1 tsp. vanilla
Directions

1Preheat oven to 350°.

2Cut dates into small pieces; add nuts and boiling water.

3Allow to cool to room temperature (about 45 minutes).

4Sift flour with baking soda and salt.

5On high speed with hand mixer, beat margarine with brown sugar, eggs and vanilla until smooth.

6Add dates; mix well.

7Add flour mixture.

8Mix well.

9Place in 2 well-greased 9 x 5-inch loaf pans.

10Bake 60 to 65 minutes or until tester inserted in center of bread comes out clean.
