Ingredients

  • 1 1/2 c. boiling water
  • 1 1/2 c. chopped pitted dates
  • 2 Tbsp. butter or margarine
  • 1 1/2 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 3/4 c. sifted flour
  • 1 tsp. cream of tartar
  • 1 c. chopped walnuts
  • 1 tsp. vanilla
  • 1 egg

Directions

    Mix the baking soda with the chopped dates.

    Pour the boiling water over the dates and baking soda.

    Add the butter or margarine, sugar and salt; mix well.

    Allow to cool.

    Add the egg when the date mixture is cool and mix it in.

    Add the remaining dry ingredients and beat well.

    Add vanilla and nuts; mix in. Pour batter into 13 x 4 1/2 x 2 1/2-inch pan.

    Bake at 350° for 40 to 50 minutes.
