  • 3/4 pound diced dates
  • 1 1/2 c. boiling water
  • 4 egg whites
  • 3/4 c. ripe mashed banana
  • 1/4 c. white grape juice
  • 1 1/2 c. whole wheat flour
  • 2 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1 c. whole wheat pastry flour
  • 1/2 c. soy flour
  • 1 teaspoon vanilla
  • 2 c. Miller bran
  • 1 c. minced walnuts

Directions

    Place the dates in a bowl, pour the boiling water over the dates.

    Preheat the oven to 350 degrees.

    Beat the egg whites and combine with banana and grape juice till smooth.

    Sift together whole wheat flour, baking pwdr and baking soda.

    Fold 1 c. of whole wheat mix into the egg mix.

    Mix in 1/2 of the dates, half the soaking water and remaining flours and vanilla.

    Stir in the remaining whole wheat mix, remaining dates and water, bran and walnuts.

    Pour mix into a 10 inch tube or possibly loaf pan sprayed with Pam and floured with whole wheat flour.

    Bake 50 min or possibly till done.

    Cold on pan for 20 min.
