- 1/2 c. butter
- 1 c. firmly packed brown sugar
- 3 eggs
- 3 Tbsp. lemon juice
- 2 c. grated carrots
- 1 c. sifted all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 c. diced dates
- 1 tsp. lemon rind
Directions

1Cream butter and sugar together.

2Add eggs, one at a time, beating well after each addition.

3Add lemon juice, rind and grated carrots; blend well.

4Sift dry ingredients together, then add to carrot mixture and blend.

5Add diced dates; mix until dates are well coated.

6Generously grease an 8 x 4-inch loaf pan or three 5 x 3-inch loaf pans.

7Spoon batter into prepared pan or pans.

8Bake in preheated oven at 350° for 30 to 40 minutes (small loaves) or 45 to 50 minutes (large loaf).
