- 1 (20 oz.) can crushed pineapple, drained well
- 1 c. margarine, softened
- 3/4 c. brown sugar, packed
- 3/4 c. white sugar
- 4 eggs
- 1 lb. carrots, shredded
- 1 (8 oz.) pkg. chopped dates
- 2 tsp. vanilla
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. salt
- powdered sugar
Directions

1Preheat oven to 350°.

2Cream margarine and sugar until light and fluffy; beat in eggs.

3Add pineapple, carrots, dates and vanilla, beating well.

4Combine dry ingredients and gradually add to creamed mixture.

5Pour into greased 9 x 13-inch pan.

6Bake at 350° for 50 to 60 minutes or until done.

7Cool completely. Sprinkle top of cake with powdered sugar.
