- 2 egg whites
- 3/4 c. sugar
- 1 (8 oz.) pkg. pitted dates, chopped
- 1/2 c. flaked coconut
- 1/2 c. chopped pecans
Directions

1Beat egg whites (at room temperature) at high speed or an electric mixer 1 minute.

2Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves (about 2 to 4 minutes).

3Fold in dates, coconut and pecans.

4Drop mixture by teaspoonfuls onto a lightly greased cookie sheet.

5Bake at 350° for 15 minutes.

6Cool on cookie sheets.

7Store in a loosely covered container.

8Yield: about 3 1/2 dozen.
