- 1 cup finely chopped dates
- 1 cup boiling water
- 1 tablespoon shortening
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped pecans
Directions

1Combine first 3 ingredients; let stand 1 hour. Stir in egg and vanilla.

2Combine flour and next 4 ingredients in a bowl; make a well in center of mixture. Add date mixture, stirring just until moistened. Spoon into greased muffin pans, filling three-fourths full.

3Bake at 350° for 25 to 30 minutes.
