Ingredients

  • 1 3/4 c. sifted flour
  • 2 Tbsp. sugar
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/2 to 3/4 c. cut dates
  • 1 beaten egg
  • 3/4 c. milk
  • 1/3 c. salad oil

Directions

    Sift dry ingredients into mixing bowl and stir in dates.

    Make well in center.

    Combine egg, milk and salad oil; add all at once to dry ingredients.

    Stir quickly only until dry ingredients are moistened.

    Drop batter from tablespoon into greased muffin pans. Fill 2/3 full.

    Bake in hot oven (400°) about 25 minutes.

    Makes 1 dozen.
