  • 1 c. chopped dates
  • 2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 6 Tbsp. unsalted butter (at room temperature)
  • 1/2 c. brown sugar
  • 1/2 tsp. vanilla
  • 2 eggs
  • 1/2 c. walnuts

    Pour 1 cup boiling water over dates; let cool.

    Heat oven to 350°.

    Butter an 8 1/2 x 4 1/2-inch loaf pan.

    Mix flour, soda and salt.

    Beat butter, sugar and vanilla until creamy.

    Beat in eggs, one at a time; beat well after each.

    Beat in flour mixture alternately with date mixture.

    Stir in nuts.

    Pour into pan; bake until toothpick stuck in center comes out clean, about 1 hour. Cool 10 minutes before slicing.
