- 1 c. chopped dates
- 2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 6 Tbsp. unsalted butter (at room temperature)
- 1/2 c. brown sugar
- 1/2 tsp. vanilla
- 2 eggs
- 1/2 c. walnuts
Directions

1Pour 1 cup boiling water over dates; let cool.

2Heat oven to 350°.

3Butter an 8 1/2 x 4 1/2-inch loaf pan.

4Mix flour, soda and salt.

5Beat butter, sugar and vanilla until creamy.

6Beat in eggs, one at a time; beat well after each.

7Beat in flour mixture alternately with date mixture.

8Stir in nuts.

9Pour into pan; bake until toothpick stuck in center comes out clean, about 1 hour. Cool 10 minutes before slicing.
