Date Nut Bread

Ingredients

  • 3/4 c. sweet sherry or water
  • 1 tsp. baking soda
  • 1 c. pitted dates, diced
  • 1/4 c. shortening
  • 1 c. sugar
  • 1 1/3 c. flour
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. chopped walnuts

Directions

    Heat sherry or water to just below boiling.

    Sprinkle soda over dates in a bowl.

    Pour hot sherry or water over dates and cool.

    Cream together shortening and sugar.

    Add cooled date mixture, beaten eggs and vanilla.

    Mix mixture, stirring until blended.

    Stir in nuts.

    Pour into 2 greased loaf pans (7 1/2 x 4 1/2 x 2 1/2 inches).

    Bake in moderate oven (350°) for 50 to 60 minutes.
