  • 1 (8 oz.) pkg. chopped dates
  • 1 1/4 c. boiling water
  • 2 1/4 c. flour
  • 1 c. chopped nuts
  • 3/4 c. packed brown sugar
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 egg, slightly beaten
  • 2 Tbsp. oil

    Combine dates and boiling water.

    Let stand 15 minutes. Grease and flour a 9 x 5-inch loaf pan.

    Preheat oven to 350°.

    In a large bowl, mix with fork, flour, nuts, brown sugar, soda and salt.

    Stir in egg, oil and date mixture just until flour is moistened.

    Spoon evenly into a loaf pan.

    Bake 65 minutes.

    Cool in pan for 10 minutes.

    Remove from pan.

    Makes a 2 pound loaf.
