Date Nut Cake

Ingredients

  • 1 lb. pitted dates, chopped
  • 1 egg
  • 1 3/4 c. flour
  • 1 tsp. vanilla
  • pinch of salt
  • 1 c. chopped nuts
  • 1 c. granulated sugar
  • 1 Tbsp. butter
  • 1 tsp. baking soda
  • 1 c. boiling water
  • cherry halves (optional)
  • extra nuts (optional)

Directions

    Scald dates, baking soda and butter with the cup of boiling water.

    When cool, add all other ingredients.

    Bake in moderate oven (350°) for 45 to 55 minutes (use an angel food cake pan or Bundt pan).

    Cool upside-down and when removed from pan, glaze with powdered sugar/water or just sprinkle with powdered sugar. Decorate with cherry halves and nuts.
