Ingredients

  • 1 c. sugar
  • 2 Tbsp. shortening
  • 1 lb. dates, cut fine
  • 1 1/4 c. flour
  • pinch of salt
  • 1 tsp. vanilla
  • 1 c. chopped nuts
  • 1 tsp. soda
  • 1 c. boiling water
  • 1 egg, beaten

Directions

    Cream the shortening and sugar.

    Add beaten egg.

    Add soda to finely cut dates.
  4. 4
    Add boiling water.

    Sift flour and salt. Slowly add creamed mixture to dates, then slowly add flour and salt.

    Add vanilla and nuts.

    Bake in greased and floured loaf pan (or oil and line with waxed paper) for 1 hour or more, until toothpick inserted into center comes out dry at 350°.
