  • 1 c. chopped dates
  • 1 c. water
  • 1/2 c. margarine
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 2/3 c. self-rising flour
  • 1 c. chopped pecans

Directions

    Bring dates and water to a boil, then allow to cool completely.

    Cream margarine and sugar.

    Add egg, vanilla, flour and pecans.

    Mix as little as possible to combine.

    Add cold boiled date mixture and mix lightly.

    Bake in muffin tins at 425° 25-30 min. or until tops are dark.
