Ingredients

  • 3 egg whites
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 c. chopped nuts
  • 1 c. dates, pitted and chopped
  • 1 lb. brown sugar

Directions

    Beat egg whites until frothy.

    Add salt and vanilla; beat until egg whites hold peaks.

    Add brown sugar, a few tablespoons at a time and continue beating until mixture forms glossy, pointed peaks.

    Fold in dates and nuts.

    Drop by teaspoonfuls onto unglazed brown paper on cookie sheet.

    Bake in 300° oven 20 to 25 minutes. Cool slightly before removing from paper to wire rack.

    Makes about 4 dozen.
