Ingredients

  • 2 lb. pork, cubed
  • 2 Tbsp. vinegar
  • 1 c. onion
  • 3 Tbsp. chopped garlic
  • 1/2 c. chopped tomato
  • 1 tsp. parsley flakes
  • 1 tsp. thyme
  • 1/2 c. chopped celery
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/2 c. cooking oil
  • 3 c. hot water

    Wash meat in vinegar and water.

    Put all ingredients in bowl and cover.

    Allow to sit 45 minutes to 1 hour for seasoning to penetrate meat.

    Remove seasoning.

    In a pot, add cooking oil and brown the meat.

    Add seasoning.

    Brown 1/2 hour.

    Add hot water and simmer until tender.

    Do not dry out.

    Simmer to a gravy.
