- 2 lb. pork, cubed
- 2 Tbsp. vinegar
- 1 c. onion
- 3 Tbsp. chopped garlic
- 1/2 c. chopped tomato
- 1 tsp. parsley flakes
- 1 tsp. thyme
- 1/2 c. chopped celery
- 1 tsp. salt
- 1 tsp. black pepper
- 1/2 c. cooking oil
- 3 c. hot water
Directions

1Wash meat in vinegar and water.

2Put all ingredients in bowl and cover.

3Allow to sit 45 minutes to 1 hour for seasoning to penetrate meat.

4Remove seasoning.

5In a pot, add cooking oil and brown the meat.

6Add seasoning.

7Brown 1/2 hour.
-
8Add hot water and simmer until tender.

9Do not dry out.

10Simmer to a gravy.
