- 6 small baking potatoes
- 3 Tbsp. melted butter
- 1 tsp. salt
- 2 Tbsp. dry bread crumbs
- 2 Tbsp. Parmesan cheese (optional)
Directions

1Preheat oven to 425°.

2Peel potatoes and put them into cold water.

3Put 1 potato in a deep spoon.

4Slice it down to the spoon about 1/8-inch apart.

5Return potato to water.

6Repeat with rest of potatoes.

7Drain potatoes and pat dry.

8Put potatoes in baking dish.

9Baste them with melted butter.
-
10Sprinkle with salt.

11Bake 30 to 45 minutes.

12Sprinkle fine bread crumbs over each potato and baste with butter.

13Continue cooking until tender.

14Parmesan cheese may be added 5 minutes before removing.

15Serves 4.
