David'S Bumpy Pudding

- 1/2 c. large tapioca
- 1 1/2 c. water
- 2 eggs
- 1/2 c. sugar
- 1 qt. milk
- 1 1/2 tsp. vanilla extract
- 1 tsp. almond extract
Directions

1Soak tapioca in water overnight or a couple of hours.

2In saucepan beat eggs.

3Add sugar and continue beating until blended. Add milk.

4Stir and add tapioca and water.

5Stir.

6Cook until it thickens, stirring constantly. Boil 3 to 5 minutes.

7Remove from heat.

8Add vanilla and almond or 1/2 teaspoon almond and 1/2 teaspoon lemon extract.

9Cool and serve.

10Serves 6 people or 2 servings for David.
