De Pepe Salad

Ingredients

  • 1 generous c. de pepe macaroni, cooked and cooled
  • 1 (20 oz.) can crushed pineapple, drained
  • 2 (8 oz.) cans mandarin oranges, drained
  • 2 c. juice (pineapple and orange, add water to make 2 c.)
  • 3 eggs, beaten
  • 1 c. sugar
  • 2 Tbsp. flour
  • 1 c. miniature marshmallows
  • 4 oz. Cool Whip (or more)

Directions

    Heat juice and thicken with sugar, flour and beaten eggs.

    Mix with macaroni; let set overnight.

    Next day, fold in fruit, marshmallows and Cool Whip.
