  • 5 - 6 medium size red potatoes
  • 1/2 lb. bacon
  • 1 large onion
  • 1 c. fresh parsley, chopped
  • 2 tsp. beau monde seasoning
  • 1 tsp. black pepper

Directions

    Boil potatoes (not peeled) until nearly done.

    While potatoes are cooking, chop bacon and saute with onion.

    When potatoes are nearly done, drain water and chop into large chunks.

    Put potatoes into skillet with bacon.

    Add parsley and seasoning.
  6. 6
    Cook another 5 minutes and serve.
