- 5 - 6 medium size red potatoes
- 1/2 lb. bacon
- 1 large onion
- 1 c. fresh parsley, chopped
- 2 tsp. beau monde seasoning
- 1 tsp. black pepper
Directions

1Boil potatoes (not peeled) until nearly done.

2While potatoes are cooking, chop bacon and saute with onion.

3When potatoes are nearly done, drain water and chop into large chunks.

4Put potatoes into skillet with bacon.

5Add parsley and seasoning.

6Cook another 5 minutes and serve.
