Deep Fried Catfish

  • 4 catfish filets
  • 1/4 c. paprika
  • 2 c. flour
  • 2 large eggs
  • 1/4 c. milk
  • oil
  • lemon slices (optional)

Directions

    Select several fresh catfish fillets. Set aside. Put oil in deep pan or wok 3 - 4 inches deep. Heat oil until it just starts to smoke.

    Mix paprika and flour together in shallow dish.

    In separate dish whip eggs and milk together. Dip fillets in egg mixture then dredge with flour.

    Slowly lower fillets in hot oil. Don't drop in oil.

    Deep fry to a golden brown or fish starts to flake.

    Garnish with lemon slice.
