- 4 catfish filets
- 1/4 c. paprika
- 2 c. flour
- 2 large eggs
- 1/4 c. milk
- oil
- lemon slices (optional)
Directions

1Select several fresh catfish fillets. Set aside. Put oil in deep pan or wok 3 - 4 inches deep. Heat oil until it just starts to smoke.

2Mix paprika and flour together in shallow dish.

3In separate dish whip eggs and milk together. Dip fillets in egg mixture then dredge with flour.

4Slowly lower fillets in hot oil. Don't drop in oil.

5Deep fry to a golden brown or fish starts to flake.

6Garnish with lemon slice.
