- medium eggplant (about 1 lb.)
- 1/2 tsp. salt
- 1 egg white
- 1 c. flour
- 2 Tbsp. peanut oil
- 1 tsp. ground cumin
- 1 tsp. onion salt
- 1/4 tsp. cayenne pepper
Directions

1Pare eggplant; cut in half lengthwise and then into 1/2-inch wide slices.

2Sprinkle with salt.

3Set aside for 15 minutes.

4Beat egg whites until stiff.

5Beat together the flour, milk, 1/3 cup water, 2 tablespoons peanut oil, cumin, onion salt and cayenne. Fold in egg whites.

6Dip in eggplant slices and deep fry at 375° for 2 to 3 minutes.

7Drain and serve hot.
