Deep Fried Eggplant

  • medium eggplant (about 1 lb.)
  • 1/2 tsp. salt
  • 1 egg white
  • 1 c. flour
  • 2 Tbsp. peanut oil
  • 1 tsp. ground cumin
  • 1 tsp. onion salt
  • 1/4 tsp. cayenne pepper

    Pare eggplant; cut in half lengthwise and then into 1/2-inch wide slices.

    Sprinkle with salt.

    Set aside for 15 minutes.

    Beat egg whites until stiff.

    Beat together the flour, milk, 1/3 cup water, 2 tablespoons peanut oil, cumin, onion salt and cayenne. Fold in egg whites.

    Dip in eggplant slices and deep fry at 375° for 2 to 3 minutes.

    Drain and serve hot.
