Deep Fried Kudzu Tofu

  • 250 ml soymilk
  • 20 grams kudzu starch
  • 1 tbsp potato starch
  • 1/2 cup mentsuyu
  • 4 grams thin green spring onion

Directions

    Put the soymilk and kudzu starch into the bowl and mix well.

    Pour step 1 into a small sauce pot.

    Cook over on a low frame.

    Stir continuously.

    Transfer step 2 to a vat, and transfer to the frigde to solidify once it has cooled.

    Chop the tofu into 4 pieces.

    Sprinkle potato starch over the tofu.

    Pour a small amount of oil into a pan and fry the tofu.

    Once the cubes of tofu begin to brown, flip them over.

    Serve the tofu on a plate and thoroughly cover in mentsuyu.

    Garnish with the green onions.
