Deep Fried Squid Rings

- 3 lb. squid, cleaned and cut into rings
- flour (for coating at least 3 cups)
- salt and pepper to taste
- oil for deep frying (peanut oil is best)
Directions

1Dry rings thoroughly with paper towels.

2Coat with flour, to which salt and pepper has been added.

3Heat oil to 350° or until drop of water sizzles immediately when dropped in oil.

4Plunge basket laden with 1 layer of squid into oil, which should bubble vigorously on contact.

5If you don't have basket for deep frying, use large spoon or tongs to immerse squid in oil and to remove. Fry until coating turns brown, about 3 to 4 minutes.

6Serve hot with lemon-garlic butter or cocktail sauce.
