- 4 boneless chicken breast halves (about 1 1/4 lb.)
- 1 Tbsp. sherry
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 egg whites
- 1/4 cornstarch
- 2 to 2 1/2 c. finely chopped walnuts
- vegetable oil
- gingered plum sauce
Directions

1Cut chicken into bite-size pieces; sprinkle with sherry, salt and pepper.

2Set aside.

3Beat egg whites (at room temperature) at high speed of an electric mixer until foamy.

4Gradually add cornstarch to egg whites, beating until stiff peaks form.

5Gently fold in chicken.

6Roll each chicken piece in chopped walnuts; fry in 2 inches hot oil (350°) until golden brown.

7Drain on paper towels.

8Serve chicken with Gingered Plum
