- 1 c. cooked rice
- 1/4 c. butter or margarine
- 3/4 c. molasses
- 1 c. sugar
- 2 eggs, beaten
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1 (9-inch) unbaked pie shell
- 1 c. whole pecans
Directions

1Cook rice until very soft (at least twice as long as customary).

2Drain and mash with a fork.

3Melt butter in a large saucepan.

4Stir in molasses, sugar, eggs, salt, vanilla and rice; pour into pie shell.

5Sprinkle pecans evenly over the top.

6Bake in a moderate oven (375°) for 50 minutes.

7Cool before serving. Makes one 9-inch pie.
