  • 3 lb. beef or deer
  • 1 Tbsp. salt
  • 1 Tbsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. black pepper
  • 1/2 tsp. red pepper

    Cut meat in strips 1/4 inch thick, 3 inches long and 1/2 inch wide.

    Put meat in 2-inch deep pan.

    Mix other ingredients with 1 glass of water, then add enough water to cover meat.

    Soak meat for 24 to 36 hours.

    Stir every 10 hours to coat well.

    After soaking, place meat on paper towels to drain water.

    Sprinkle one side with red pepper.

    Move oven rack to top of oven.

    Place toothpick through end of meat and hang on rack.

    Put oven on lowest setting.

    Use spoon to crack door open.

    Cook 8 to 12 hours; if crunchy at 8 hours, take out.

    After cooling, store in jar in refrigerator.
