Ingredients
- 3 lb. beef or deer
- 1 Tbsp. salt
- 1 Tbsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp. black pepper
- 1/2 tsp. red pepper
Directions

1Cut meat in strips 1/4 inch thick, 3 inches long and 1/2 inch wide.

2Put meat in 2-inch deep pan.

3Mix other ingredients with 1 glass of water, then add enough water to cover meat.

4Soak meat for 24 to 36 hours.

5Stir every 10 hours to coat well.

6After soaking, place meat on paper towels to drain water.

7Sprinkle one side with red pepper.

8Move oven rack to top of oven.

9Place toothpick through end of meat and hang on rack.

10Put oven on lowest setting.
-
11Use spoon to crack door open.
-
12Cook 8 to 12 hours; if crunchy at 8 hours, take out.

13After cooling, store in jar in refrigerator.
