- Pastry
- 2 Tbsp. butter
- 1 cup sugar
- 4 eggs, separated
- 2 Tbsp. flour
- 1 cup milk
- 1 tsp. grated lemon rind
- 1/3 cup lemon juice
- 1/4 tsp. salt
Directions

1Prepare pastry and make an unbaked 9 inch pastry shell. Chill while filling is being prepared.

2Cream butter; add sugar gradually and cream together until light and fluffy.

3Add egg yolks, one at a time beating after each one.

4Add flour, stir in milk, lemon rind, and juice.

5Beat egg whites with salt until stiff but not dry.

6Pour into pastry shell.

7Bake on lower shelf in hot oven about 30 minutes at 425 degrees or until knife inserted in center comes out clean.
