Deluxe Chocolate Cream Pie

  • 1 baked 9-inch pie shell
  • 1/2 c. soft butter
  • 2 oz. unsweetened chocolate, melted and cooled
  • 1 tsp. vanilla or vanilla extract
  • 2 eggs
  • 1 (4 oz.) pkg. instant vanilla pudding
  • 1/2 pt. whipping cream
  • 1/2 c. milk, 1 1/4 cup half and half/coffee creamer (you can use homogenized milk
  • 1/2 tsp. rum extract

Directions

    Combine butter, sugar, chocolate and vanilla. Add eggs, one at a time, beating well after each addition.

    Spread this mixture into the baked pie shell (could use graham cracker crumb pie shell), baked is better.

    Prepare pudding mix and use only the amount of 1 3/4 cups total.

    Add extract (rum, if you wish). Spread this on top of chocolate mixture.

    Chill.

    Whip the cream until soft and fluffy.

    Spread on top of pie.
