Deluxe Potato Soup

Ingredients

  • 6 large potatoes, diced
  • 1 medium onion, chopped
  • 2 tsp. salt
  • 2 (16 oz.) pkg. frozen Florentine-style vegetables (cauliflower, broccoli and carrot mixture)
  • 2 c. potato water
  • 1 small box Velveeta cheese
  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 4 c. milk
  • 2 c. ham, diced very fine

Directions

    Put potatoes, onion and salt in Dutch oven.

    Add water to cover.

    Boil until half done.

    Add vegetables.

    Simmer until done. Pour off and save 2 cups water.

    Add back in the 2 cups water, cheese, butter, flour, milk and ham.

    Heat thoroughly.

    Serves approximately 15.
