  • 1 (32 oz.) pkg. hash brown potatoes, thawed (2 to 3 hours)
  • 1 medium onion, chopped
  • 1/2 c. chopped green pepper
  • 1 can cream of potato soup, undiluted
  • 1 can cream of celery soup, undiluted
  • 1 (8 oz.) carton light sour cream
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. or 4 oz. Monterey Jack cheese, shredded or use Cheddar cheese

    Combine all but the cheese.

    Put in greased shallow 2-quart casserole.

    Bake at 325° for 1 1/2 hours.

    Sprinkle with cheese and bake 15 more minutes.
