  • 2 c. fine egg noodles
  • 1 green bell pepper
  • 3 tbsp. chopped onion
  • 1 tbsp. water
  • 1 c. diced ham
  • 6 eggs
  • 1 c. skim milk
  • 2 tsp. mustard
  • mixed greens

    Cook 2 cups fine egg noodles as package label directs; drain.

    Preheat oven to 375 degrees F. Spread noodles over bottom and up sides of a 9-inch deep pie plate coated with cooking spray.

    In small saucepan over medium heat, cover and cook 1 chopped green bell pepper, 3 Tbsp.

    chopped onion and 1 Tbsp.

    water until peppers are crisp-tender.

    Stir in 1 cup diced ham, then sprinkle mixture over noodle crust.

    In a bowl, beat 6 eggs, 1 cup skim milk and 2 tsp.

    mustard; pour over veggies and ham.

    Bake quiche until center is puffy and knife inserted near center comes out clean, 30 to 40 minutes

    Let stand 5 minutes, then slice and serve with mixed greens.
