Deviled Clams

  • 1 qt. clams (meat and broth, save shells)
  • 1 1/2 c. milk
  • 3 eggs
  • butter (size of egg)
  • 1/8 tsp. dry mustard
  • 3 dashes cayenne pepper
  • 1 1/2 c. ground milk crackers (Royal Lunch)

Directions

    Grind clams, bring clam broth to boil; skim.

    Add ground clams, milk and butter.
  3. 3
    When this mixture boils, add crackers, eggs and seasonings.

    Wash shells, fill each with clam mixture. Dot with buttered bread crumbs and brown in oven.

    This amount will fill about 40 clam shells.
