Ingredients
- 1/4 c. minced onion
- 1/4 c. minced green pepper
- 1/4 c. minced celery
- 2 1/2 Tbsp. butter
- 1/2 lb. fresh or frozen lump crab meat, picked over
- 3 Tbsp. mayonnaise
- 1/4 c. thinly sliced green onions
- 3 Tbsp. fine fresh bread crumbs
- 1/2 tsp. Worcestershire sauce
- 1 Tbsp. minced fresh parsley
- 2 Tbsp. chopped bottled, roasted red pepper
- cayenne to taste

Directions

1In a heavy skillet, saute onion, green pepper and celery in 1 1/2 tablespoons of the butter until softened.

2Stir in crab, mayonnaise, green onions, 2 tablespoons of the bread crumbs, Worcestershire sauce, minced parsley, roasted red pepper, cayenne and salt to taste.

3Divide mixture between 2 large or 4 small scallop shells or ramekins.

4Sprinkle remaining bread crumbs over; drizzle with remaining butter,

5melted.

6Bake mixture on rack of broiler pan in upper third

7of preheated 400° oven for 10 minutes. Garnish and serve.
