Ingredients

  • 1/4 c. minced onion
  • 1/4 c. minced green pepper
  • 1/4 c. minced celery
  • 2 1/2 Tbsp. butter
  • 1/2 lb. fresh or frozen lump crab meat, picked over
  • 3 Tbsp. mayonnaise
  • 1/4 c. thinly sliced green onions
  • 3 Tbsp. fine fresh bread crumbs
  • 1/2 tsp. Worcestershire sauce
  • 1 Tbsp. minced fresh parsley
  • 2 Tbsp. chopped bottled, roasted red pepper
  • cayenne to taste
  • lemon (for garnish)

Directions

    In a heavy skillet, saute onion, green pepper and celery in 1 1/2 tablespoons of the butter until softened.

    Stir in crab, mayonnaise, green onions, 2 tablespoons of the bread crumbs, Worcestershire sauce, minced parsley, roasted red pepper, cayenne and salt to taste.

    Divide mixture between 2 large or 4 small scallop shells or ramekins.

    Sprinkle remaining bread crumbs over; drizzle with remaining butter,

    melted.

    Bake mixture on rack of broiler pan in upper third

    of preheated 400° oven for 10 minutes. Garnish and serve.
