Ingredients

  • 1/4 to 1/2 c. butter
  • 2 Tbsp. flour
  • 1 Tbsp. minced parsley
  • 2 tsp. lemon juice
  • 1 tsp. prepared mustard
  • 1/2 tsp. horseradish
  • 1 tsp. salt
  • 1 c. milk
  • 2 c. crabmeat
  • 2 hard-boiled eggs, minced
  • 1/2 c. soft bread crumbs
  • 2 Tbsp. melted butter

Directions

    Melt butter in top of double boiler.

    Stir in flour and add next five ingredients.

    Slowly stir in milk.

    Cook over boiling water, stirring until thickened.

    Remove from heat and add crab meat and eggs.

    Top with buttered bread crumbs.

    Bake at 400° for approximately 10 minutes.

    Yields 6 ramekins.
