  • 2 hard-cooked eggs, mashed thoroughly with fork
  • 2 Tbsp. melted butter or margarine
  • 1/2 tsp. vinegar
  • pepper, salt and mustard to taste
  • 1 egg, beaten lightly
  • 1 c. or more tomatoes
  • add bread or crackers until dry enough to form into cakes
  • onion and parsley (optional)
