  • 6 hard-cooked eggs, peeled and finely chopped
  • 1 tsp. finely minced onion
  • 4 strips bacon, fried and crumbled fine
  • 1/4 tsp. prepared mustard
  • 1/4 c. mayonnaise
  • 1 c. finely shredded Cheddar or finely chopped parsley and chives

Directions

    In a small bowl mix eggs, onion, bacon, mustard and mayonnaise.

    Mix until creamy.

    Form into 1-inch balls.

    Roll in cheese or parsley-chives.

    Arrange on plate.

    Garnish with parsley sprigs, cherry tomato halves and or radish roses.

    Cover with plastic wrap and refrigerate.
