- 6 hard-cooked eggs
- 1 c. chipped ham
- 1/3 c. grated carrots
- 2 Tbsp. mayonnaise
- salt and pepper
- 1/4 tsp. mustard
- paprika
- fresh parsley or tsp. pimento
Directions

1Cut eggs in half lengthwise; remove yolk.

2Mash yolks and sprinkle with salt and pepper to taste.

3Add ham, carrots, mayonnaise and mustard.

4Stir well.

5Fill egg halves with mixture. Chill.

6Sprinkle with paprika or garnish with pimento or fresh parsley.
